Role Overview – Specialty Chinese Sous Chef
We are seeking a Specialty Chinese Sous Chef to join a team of five chefs, working under an experienced Head Chef. This is a rotational role (3 months on / 1 month off) with an ASAP start. You will lead on authentic Chinese cuisine – with a strong emphasis on Szechuan/Sichuan and home-style, family-sharing dishes – while fully integrating into the wider galley brigade, supporting all culinary operations as required.

What You’ll Be Working On
You will craft comforting, flavour-packed Chinese menus tailored to family-style dining, prepare and execute these dishes at consistently high standards, and coordinate smoothly with the Head Chef and galley team. You’ll ensure impeccable mise en place, stock management, hygiene, and galley organisation while remaining flexible to guest preferences and itinerary-driven schedules.

Who You Are
You are either a native Chinese chef or a chef with deep, hands-on experience in authentic regional Chinese cuisine, particularly Szechuan. You are confident producing a wide variety of traditional, home-style dishes rather than fine-dining showpieces, and you understand how to adapt flavours and spice levels to different palates while staying true to authenticity. You are a calm, reliable team player who thrives in a close-knit brigade, communicates clearly, respects hierarchy, and takes pride in consistency, cleanliness, and organisation.

Key Responsibilities

- Lead on authentic Chinese cuisine aboard the yacht, planning and preparing home-style, family-sharing menus with a strong focus on Szechuan/Sichuan flavours
- Work as Sous Chef under the Head Chef, supporting overall galley operations and stepping up when needed to ensure seamless service
- Execute daily mise en place, cooking and plating for guest and crew meals, prioritising flavour, consistency and timely service over fine-dining presentation
- Collaborate with the Head Chef on menu design, provisioning lists and adapting dishes to guest preferences, special diets and changing guest numbers
- Maintain strict hygiene, cleanliness and organisational standards in all galley areas, adhering to HACCP and yacht safety protocols at all times
- Assist with stock control, rotation, portioning, labelling and cost-conscious use of high-quality ingredients
- Contribute to a positive, respectful and cooperative team environment, supporting fellow chefs during busy services, charters and guest trips
- Communicate proactively with the Head Chef about guest feedback, menu ideas, dietary requirements and any operational challenges
- Support crew food where required, ensuring nutritious, satisfying meals that respect cultural diversity on board
- Uphold the yacht’s professional image, including personal grooming, uniform standards and discretion with guests and their privacy

Skills & Experience

- Native Chinese chef or chef with demonstrable, in-depth experience in authentic regional Chinese cuisine, especially Szechuan/Sichuan and home-style dishes
- Proven background in professional kitchens (private households, hotels, restaurants and/or superyachts); prior yachting experience advantageous but not essential
- Strong repertoire of traditional, family-style Chinese dishes, with the ability to adapt spice, flavour and presentation for family dining rather than fine dining
- Solid foundation in kitchen organisation, mise en place, stock rotation, ordering support and food safety/HACCP best practice
- Confident working within a brigade structure, taking direction from the Head Chef and collaborating effectively with a team of five chefs
- Physically and mentally prepared for the demands of life at sea, including long hours, changing itineraries and last-minute guest requests
- Excellent communication skills in English, with a positive, respectful and solution-focused attitude
- Valid STCW basic safety training and ENG1 (or equivalent) medical certificate, or willingness and ability to obtain prior to joining
- Clean background, verifiable references and eligibility to travel freely to the yacht’s cruising areas
- Available to start ASAP and commit to a 3 months on / 1 month off rotational schedule
